Parboiled rice

3 cup

Urud dal

1 cup

Fenugreek (uluva)

¼ teaspoon

Water

1(1/2) cups of water

Ghee or oil

 

 

Soak dal and fenugreek together and rice  separately in water for 4-6 hours. Drain off water and grind the rice into a very fine paste. Grind the dal and fenugreek  into a very fine paste. Mix them together and add water to a make a smooth batter. Add salt and mix well. Allow the batter to ferment overnight. Heat a flat pan. Rub oil. Pour 4 tablespoons of batter at a time and spread into a very round shape. When the dosa is light brown on one side , turn over for few minutes. Take off the fire and eat with chutney (see coconut chutney).
